Easy Chicken Nachos

All week I have had an intense nacho craving.. which I finally satisfied last night with these! These easy chicken nachos were exactly what I was craving and were incredibly easy to throw together. A few ingredients and an oven are all you need to make these nachos.

This recipe makes a huge batch of nachos, making them perfect for parties, game nights, and movie nights. Serve them up with some guacamole, sour cream, salsa and top them with your favorite toppings and you are set!

Ingredients:

1 bag tortilla chips

2 chicken breasts, cooked and shredded or a rotisserie chicken

1/2 cup salsa

3 cups of your favorite variety of shredded cheese (I used a mix of cheddar and a Mexican blend)

1 can refried or pinto beans (optional)

All your favorite toppings such as guacamole, sour cream, salsa, queso, tomatoes, olives etc..

Instructions:

Cook and shred up your chicken breasts, or shred up a rotisserie chicken. Mix the chicken in a bowl with salsa and about 1/2 cup of the shredded cheese.

Spread half the bag of tortilla chips on a large baking sheet. Layer cheese, the chicken mixture and beans (if using) over the chips. Sprinkle with a little more cheese. Repeat layering of chips, cheese, chicken etc..

Sprinkle remaining cheese over the top and bake at 425 for 10-12 minutes or until the cheese is melted and bubbly and the chips are starting to brown.
